Smart & Final has a great selection of Italian fare with their LaRomanella line! I was given the challenge to create a meal using LaRomanella products, from Smart & Final. I decided on bruschetta and pasta with pesto & mozzarella!
For my pasta dish I used a 16oz package of Penne Lisce from LaRomanella, an 8oz container of Pesto from LaRomanella and 8oz package of mozzarella cheese. When the penne was done cooking I added the pesto and the diced mozzarella. The warm pasta made the cheese melt nicely.
My completed pasta dish was a big hit. It was a nice change from regular spaghetti and tomato sauce!
For the bruschetta I picked up a box of LaRomanella
garlic toast, 3 tomatoes, 1 red onion, fresh basil, LaRomanella balsamic vinegar, LaRomanella olive oil and LaRomanella Parmesan cheese.
Bake the garlic toast according to directions and mix your topping together.
3 diced tomatoes
1/4 cup diced red onion
4 basil leaves chopped
3 Tbsp Olive Oil
2 Tbsp Balsamic Vinegar
1 Tbsp Parmesan cheese

Bruschetta is a something I never seem to make well, but I'm definitely going to give your recipe a try!
