Recipe: Cake Pops!

Have you seen the latest rage in baking? They are called cake pops or lolli cakes! I've been wanting to try my hand at making these for quite a while. I finally decided to go for it. I found a basic recipe on



Here's what I bought to make these:
Cake mix
Frosting
Candy Melts or Candi Quik (I preferred the Candi Quik, the candy melts were too thick)
Lollipop sticks
Styrofoam (not pictured)

First, I baked my cake and let it cool completely. I then crumbled the cake into a bowl and stirred in the can of frosting. You may have to use clean hands to blend really well. Cover bowl and cool in refridgerator for about an hour. Once the mix is nice and cold, roll into small balls and place on cookie sheet covered with wax paper. Place the cake balls in the freezer for about an hour. Melt your Candy Melts or Candi Quik in a double boiler or in the microwave. Take cake balls from the freezer, dip the end of the lollipop sticks in the melted chocolate and then insert stick into the cake ball. Be sure not to push it completely thru. Then, dip the cake balls into the melted chocolate. You can dip them in sprinkles or colored sugar. Stand them up in the styrofoam and let them set up in the fridge or freezer.

Here is a picture of the ones I made for my cousins bridal shower. She loves stars, so I found some star shaped sprinkles to use on them.
