I love salsa and guacamole. Combining them into one dish seemed like a great idea so this is what I came up with: Avocado Corn Salsa!
Ingredients:
2 Cups Frozen Sweet Corn
2 Avocados Diced (add some lime juice to prevent browning)
3 Tbs. Minced Cilantro
1 Cup Cherry Tomatoes Cut in Half
1/4 Cup Diced Red Onion
1 Cup Diced Cucumber
4 Tbs. Olive Oil
2 Tbs. Balsamic Vinegar
Garlic Powder, Salt & Pepper to Taste
Instructions:
Place the frozen corn in a hot saute pan. Saute for 3-5 minutes until corn is slightly brown. This step gave the corn almost a smoky flavor. Let the corn cool and add all ingredients to a large bowl. You can serve immediately or let it chill in the fridge for a few minutes.
Be sure to adjust the spices to your taste and serve within an hour or so. The avocado will eventually start to brown.
I ate this with some tortilla chips but I bet it would taste amazing as a wrap in a whole wheat tortilla.
