I've heard quite a bit about chia seeds and how good they are for you. And yes, the same chia seeds that can be grown onto a clay figurine to look like hair!
I decided to experiment with them and make a chia pudding. It took me a few tries but I think I got the liquid to chia seed ratio pretty accurate. When the chia seeds sit in the liquid overnight, they absorb the liquid and become like tapioca.
Ingredients:
2 Cups unsweetened non dairy milk (Almond, Coconut, Soy) I used almond
2/3 Cup Chia Seeds
1 tsp. Vanilla Extract
Sweetener to taste (Honey, Agave Nectar, Stevia)
Fresh Berries
Directions:
In a quart sized jar, combine the non dairy milk, chia seeds and vanilla extract. Let sit in the fridge overnight.
Spoon some of the pudding in a bowl, mix in a sweetener to taste and add some fresh berries!
I personally used almond milk but I may try coconut milk next time. As far as a sweetener, I did not add any just the berries. The possibilities are really endless as far as toppings go!
